    Beef and Mushroom Dijon

 

Ingredients You will Need

Nonstick Cooking Spray
2 c sliced mushrooms
¼ c of water
1 medium onion, chopped
2 tbsp of Dijon mustard
4 c hot cooked rice, no salt added
Chopped, fresh parsley (optional)
¾ pound boneless beef sirloin or top round steak, ¾ inches thick, thinly sliced
1 can (10 ¾ ounces) fat free cream of mushroom soup

Directions

Spray a 10-inch nonstick skillet with cooking spray and heat over medium-high heat for 1 minute. Add the mushrooms and onion. Cook and stir until vegetables are tender. Remove the skillet from the heat.

Spray another skillet and add the beef and cook and stir until it’s well browned.

Add the soup, water and mustard and heat to a boil. Return the vegetables to the skillet and cook until the mixture is hot and bubbling. Toss rice with parsley, if desired. Serve the beef mixture over the rice.

This recipe makes 4 servings. Each serving is only 361 calories and has 6 grams of fat.

You can also make a similar chicken dish. Just replace beef with chicken and cream of chicken soup with cream of chicken soup. Instead of using Dijon mustard you can also use a packet of onion soup mix.
